Atkins Day Two Review


Yesterday was a busy day at work, so I didn't have a lot of time deal with cooking.  I'm glad I planned ahead by boiling eggs for the tuna salad.


Breakfast:
2 cups of coffee with 3 T cream and 2 packs splenda (total)
2 boiled eggs
Ostrich stick

Lunch:
3 oz. Grilled fajita beef
1 T guacamole
2 T sour cream
1/4 c shredded iceberg lettuce

Dinner:
Grilled chicken
Spinach salad with red bell pepper strips, apple cider vinegar, olive oil
1/2 ounce cheddar cheese

Snack:
Sparkling water
Braunschweiger
Beef jerky

This is my second day without happy hour.  It's not that I miss the alcohol, I just miss the habit of winding down my day.  Looking on the bright side, I continue to get a lot done after work.  Today, we got home and worked on the garden.  Then I hopped up on the tractor and mowed our field for an hour.

I'm sleeping better too, but I don't think I'm drinking enough water still. Today I only managed 4 glasses.
